Easy Chicken and Vegetable Curry



Prep time: 15 minutes, Cooking: 15 minutes, Serves: 2-4

Ingredients:
400g chicken breast, chopped into strips
1 large onion, finely chopped
2 garlic cloves
1 tbsp. of coconut oil or ghee
6 cups of mixed vegetables, roughly chopped (carrots, capsicum, carrots, cauliflower and peas)
2-4 tbsp. of good quality curry powder (taste before you add more powder)
2x200g tinned tomatoes, crushed
2 cup of vegetable or chicken stock
½ of a cup of coriander

Method:
  1. Sauté the onions and garlic in olive oil until brown in a large saucepan. 
  2. Add the chicken strips and curry powder and cook for 5-10 minutes. 
  3. Add the tinned tomatoes, water, all of the vegetables and cook for approximately 15 minutes on a medium heat. 
  4. Once cooked add the coriander and serve with quinoa or (better yet) cauliflower rice!
